Berry Brie Bites
Ingredients
- Frozen Puff Pastry - 1 package, thaved
- Brie Cheese - about 1/2 lb
- Triple Berry Preserve - about 1 cup, or use any preserve of your choice
- Large Egg - 1 beaten
Instructions
Preheat oven to 375 degrees. Grab two muffin sheets and grease them lightly.
Gently unfold the pastry sheets. Using a sharp knife or pizza cutter, cut the sheets into approximately 3 inch x 3 inch squares. Press each square into a cavity of a muffin sheet.
Cube the cheese and place a cube of brie in the center of each puff pastry square. Top the brie with a small dollop of the preserve. Brush the pastry that's sticking with the beaten egg.
Bake about 10 minutes or until puff pastry corners are toasted lightly brown. Let cool 5 minutes before serving.
I am going to continue my streak of party recipes by sharing the absolutely easiest recipe, that was the biggest crowd pleaser at my Christmas party. I know for sure that half the people who were raving about it “hate” brie cheese, but these looked so good, nobody asked what was in it.
I came across this recipe originally calling for cranberry sauce, but to me that was just too plain. I made it with a triple berry preserve because I just like the decadence of a good berry mix and also like the consistency better. But I am sure it would come out great with the cranberry as well. For me, I don’t even call this cooking. This recipe is so easy to make, I call this cheating. Make a batch of Berry Brie Bites and judge for yourselves…
