Roasted Red Pepper Pesto
Ingredients
- Roasted Red Bell Peppers - 2 - you can roast them yourself or used jarred ones
- Slivered Almonds - 3 table spoons
- Grated Parmesan Cheese - 3 table spoons
- Garlic Cloves - 2
- Italian Flat Leaf Parsley - 1/4 cup, chopped
- Fresh Lemon Juice - 1 tea spoon
- salt and pepper - to taste
Instructions
Combine all ingredients in the bowl of a food processor and pulse until coarse puree forms.
This is a perfect condiment to go on top of your crostini. I serve it with my Beef Tenderloin Crostini.
