BBQ Pulled Pork Mac and Cheese

Place hand shredded pork in a heat proof bowl and toss with the bbq sauce. Place in an oven set to 325F degrees for 15 minutes.

Place a large pot of salted water over high heat. When the water comes to a boil, add the macaroni all at once. Cook 1 minute less than package directions, stirring occasionally to prevent sticking. Drain and rinse with cold water and set aside.

In the meantime, place a heavy-bottomed pot over medium-high heat and add the butter. When the butter has melted, whisk in the flour and the spices. This will create a roux for your sauce. When a paste has formed, whisk in the milk stirring constantly, until there are no lumps. Bring the milk mixture to a gentle boil while stirring often with a whisk, being sure to scrape the bottom and sides the whole time. When the milk mixture is gently bubbling and has thickened a bit, add the shredded cheese and the parmesan. Stir until everything has melted and you have a smooth, velvety cheese sauce. Stir in the cooked macaroni.

Reserve about a third of the pork and stir the rest into the macaroni and cheese mixture. Pour macaroni and cheese mixture into lightly greased baking dish or into individual, oven-safe serving dishes. Top with the reserved pork, sprinkle with some extra shredded cheese and bread crumbs.

Bake at 350F degrees for about 20 minutes.

It is the ultimate comfort food and will turn any dead-of-the-winder blizzard into a light dusting. Absolutely guarantees everyone coming back for more. You can also bake mac and cheese in muffin tins and serve as appetizers for a party!
